This salad and zucchini hummus is one of our favorite foods to help harmonize hormones and ovulation.
The zucchini hummus contains tahini, lemon juice, garlic, olive oil and cumin. Tahini is rich in essential fatty acids, magnesium and contains thiamine, iron and calcium - all critical for egg health. Cumin is a culinary herb widely used in traditional medicines and is featured in ethnic cooking - often foods from Latin America, India, North Africa and the Middle East. Cumin increases digestion (helpful for absorption of micronutrients), is high in iron, works as an antioxidant and helps control blood sugar. The zucchini hummus and salad is loaded with hormone regulating fiber. Once you taste this- we are sure it will be on your favorite salad list! BIG GREEK SALAD & ZUCCHINI HUMMUS from Get Naked Fast by Diana Stobo
INGREDIENTS:
Lettuce of your choice
1⁄2 of peeled cucumber, diced
10-15 cherry tomatoes, sliced in half
10 kalamata olives – pit removed and cut in half 1 red pepper – diced
Mix ingredients into a lovely bowl and add a pinch of salt to the top and pepper to taste.
Add 1-2 heaping spoons of the Zucchini Hummus and mix in as dressing.
ZUCCHINI HUMMUS
2 cups of diced zucchini (washed with the peel still on)
3⁄4 cup tahini
2 tsp cumin powder
1⁄4 cup olive oil
1⁄2 cup lemon juice
1 clove garlic, minced
1 1⁄2 tsp sea salt
Mix all Zucchini Hummus ingredients into the food processor. You may store the extra hummus in the refrigerator for up to 5 days.
