Sweet potato fertility diet superfood

 

The food you eat can influence ovulation! 
Vitamin A and Vitamin C are crucial vitamins for egg health and ovulation.  This recipe features many vegetables high in both of these essential vitamins and is quite easy to make.  Coconut milk is loaded with saturated fats (medium chain triglycerides) that serve to help regulate your hormones.  This scrumptious sweet potato curry is a fertility superfood!  Enjoy over quinoa or brown rice for a satisfying meal!  
Recipe from Get Naked Fast! -Diana Stobo - makes 4 servings

INGREDIENTS
1 large sweet potato, peeled and cut into 1" cubes
1 med onion, diced into 1-in cubes
2 stalks celery, sliced into 1-inch chunks
1 large carrot, sliced into 1-inch chunks
1 red bell pepper, diced into 1-inch chunks
1 T ghee or butter
3 cups coconut milk
1 Tablespoon turmeric
2 teaspoons Garam Masala
1 teaspoon cumin, ground
1 teaspoon sea salt
1⁄2 tsp black pepper
freshly ground
Fresh cilantro leaves for garnish

In a 3-quart saucepan on medium heat, sauté vegetables in butter or ghee for 2-3 minutes. Add turmeric, garam masala, cumin, salt and pepper and coconut milk. Simmer for about 10 minutes or until veggies are desired texture. Garnish with fresh cilantro.
